My Paella Travels: It’s Not Just Paella, It’s a Paella Experience! Paella Chef & Caterer | Nashville, Tennessee

Where will My Paella Travel next?

My Paellas are a unique fusion of local ingredients such as locally made sausages, locally grown produce, southern seafood and authentic Spanish flavors, techniques and ingredients. Each paella is a work of art for the eyes, palate and soul.

Paella Love

We all have that common thread of yearning for something to feed our hearts and souls. Well, my paellas do just that. My paellas bring friends, family and the community together for a feast of Paella Love.

My Paella has traveled from Tennessee to Texas, Louisiana and to Georgia feeding the souls of friends, family and the community bringing people together through a celebratory feast of life and love through a plate of paella and a glass (or two) of wine.

Will My Paella Travel to you? Have Paella Pan:Will Travel!

WOW! I have been very busy for many months now riding the “paella wave.”  So many fun adventures have come my way and I can’t wait to see what else ahead.

Having it all with Lisa on Wine Antics!

In March, I was featured on the live talk show  (CLICK TO WATCH) Wine Antics and was thrilled to talk to Jenn and Stubb (Cork Envy) about “having it all!”

My Paella Travels makes people happy! You can see it in their smiles.

My journey; my mission is to keep spreading some of that awesome Paella Love from east to west, north to south and everywhere in between.

My Paella Travelled to Macon, Georgia at Travis Jean’s Cooking School and Event Center and fed over 50 hungry paella lovers 4 paellas: Paella Mixta with both seafood, chicken and sausage, Vegetarian Paella, Texas-Louisiana Style Paella with Andouille Sausage and Smoked Brisket and a Black Paella filled to the brim with seafood and colorful vegetables. Go big or go home! Only 32 and 36 inch paella pans allowed here!

Dueling with Chef Kevin and my 36 inch bad boy paella pan!

Over 50 guests wined and dined with My Paella Travels.

Thanks to Chef Kevin, I got to meet so many amazing people in Macon, Georgia who I now call my friends.

One of the stars of the event is my famous Paella Mixta which is loaded with seafood, sausage, shrimp, chicken and house made chicken saffron broth.

Sharing the paella experience with Scott and Bill was the best! LOVE YOU BOTH!

Even vegetarians love my paellas!

Seafood Paella made with Black Cuttlefish ink!

I channelled my Louisiana and Texas “culinary roots” with a Texas-style Smoked Brisket and Andouille Sausage Paella in Macon, Georgia.

In 2015, I won a local Paella Cook Off with my Gourmet Fusion Paella at Casa Azafran! It was a crowd-pleaser!  My winning paella was a Spanish Paella with Nashville Hot Chicken!

I love sharing my paella skills with Paella Cooking Classes at Savory Spice Shop in Franklin.

I enjoy hosting a Spanish wine and Paella Pairing at a local wine shop. My paella’s are works of art!

I host a paella cooking event every year for the University School Evening Class Events. This was a seafood paella made with Spanish fideua noodles instead of rice complete with tapas for a sold out class on Valentine’s night! This seafood paella originated from the fishing villages of Spain and there is nothing like rich flavored noodles with a crispy bottom crust.

My Paella Travels: Austin, Texas. Bringing some of that Paella Love to my awesome Texas friends. Praise Paella!

I love to have a backyard paella dinner on a warm Sunday spring evening.

In March 2017, I was asked to create and cater tapas for the USN (University School of Nashville) Spanish Wine and Tapas Pairing Fund Raising Event. This last yet biggest event of the series of yearly evening classes. There were around 80 guests, I worked by *** off and loved every single second. I cook big, live big and love big. Yep, that’s me. My Paella Travels Paella and Tapas Catering.

My famous Spanish Romesco Sauce (which everyone loves!) topped the charcoal grilled gulf shrimp and local Spanish Chorizo. This was a hit.

Here’s my take on traditional Spanish Meatballs, with a hint of Moroccan Spices, yet another hit!

Spanish cheese, meats, crispy seasoned bread and lots more.

Everyone loved my roasted heirloom tomatoes with eggplant and zucchini with Spanish spices.

Just sharing some of that Paella Love……

“My Paella Travels” to Brentwood for a Spanish Paella Birthday Party and Momma Nik’s Cheesecake for Dessert!

My Paella Travels creates magical evenings for celebrations which will bring the signature dish of Spain to you for a casual backyard gathering that you and your guests will rave about!

My Paella Travels brings the heart and soul of Spain to any celebration. Paella, the most popular and well known dish of Spain, is a vibrant rice dish often cooked outdoors.

An authentic Paella Party is a great reason to celebrate with family and friends which will be centered around a large paella brimming with vibrantly tinted Bomba rice and locally sourced vegetables with succulent meats, seafoods and mouthwatering aromas of spices. My paellas are made with authentic Spanish ingredients and prepared with traditional Spanish techniques just the way they make them in Spain.

Set up is easy. I bring it all. You and your guests will enjoy the experience of watching the preparation and cooking of the paella before your eyes.

With every event, the best part of the experience is watching everyone enjoy themselves which is evident with smiles and laughter. I provide the main course, wine selections and tapas (if requested).  My paellas  will feed a large crowd and allows the guests to enjoy their guests while I do the cooking!

Part of what I do to help create the optimum experience is help with wine selections to pair with the paella and tapas event. For years, I have been studying wine and obtaining several certifications with the WSET and the Court of Master Sommeliers which focus on wine knowledge and pairings. Some of my favorite wines to pair are white, red and sparkling Spanish and Portuguese wines but it just begins there. Spanish foods pair very well with many wines and I would love to show how!

It takes about 45 minutes to create the paella from scratch. Guests have a chance to savor tapas and enjoy the wine selections while gathering around the paella pan. Your friends will have fun learning about the history of paella, what makes an authentic paella implementing authentic techniques and quality ingredients.

Momma Nik’s Cheesecake has paired up with My Paella Travels to create the best dessert experience ever. Momma Nik’s Cheesecakes are locally and creatively made offering a variety of flavors and sizes.

Momma Nik’s are especially great for birthday celebrations!

Wine with Lisa Hosts An Evening in Spain with Paella, Tapas and Spanish Wines

Read more at Wine With Lisa!

Wine with Lisa Hosts A Saturday Evening Spanish Culinary and Wine Adventure for a Party of 6!

“Paella” is a saffron-flavored Spanish dish made with varying combinations of rice, vegetables, meat, chicken and seafood; also referring to the large flat frying pan in which a paella is cooked.

For as long as I can remember,I have always had a fascination and passion for cooking Paella. Maybe it was the Cajun-Creole culinary influences growing up in Louisiana and eating all of the different versions of authentic Jambalaya-for Jambalaya IS Louisiana’s version of Paella, after all! (at least it is to me). Or,maybe it’s the thought of leisurely enjoying Paella and little bites of Tapas with a fantastic glass of Rioja while sitting in a little Tapas Bar in Madrid. I have never been to Spain although it’s on my bucket list! I bought my first Paella Pan about 15 years ago and have been perfecting my Paella recipe ever since. The first recipe that inspired me was from a “Cooking with Wine” cookbook. The first challenge-especially 15 years ago in Nashville-was finding the correct ingredients;the second challenge was figuring out how to cook it even though I had never actually had an authentic paella! 15 years or so later and the improved availability of authentic ingredients and happily eating my share of many versions of this Spanish culinary marvel on many foodie adventures has made for many delightful events entertaining friends at my home from Texas to Tennessee. A large pan of delicious and authentic Paella,Tapas and Wine and lovely friends…. It’s about as good as it gets!

This is my large 18.5 inch Paella Pan and Bomba Rice-the ONLY rice for making great Paella.. The Paella is large enough to produce a Paella big enough to feed 10 people easily. Buying this pan at a FARADAY’S KITCHEN STORE in Austin,Texas was the best purchase I have ever made. You can also purchase any and all authentic Spanish ingredients at

I love to entertain! Hosting themed parties is fun and sharing my cooking skills and wine knowledge is what I enjoy doing! This past Saturday night,I hosted a Paella Party featuring Paella Mixta,Tapas and dessert all paired with fantastic Spanish wines for different regions of Spain.

Randy Duke and Tony Disher opened up their grand home for an evening of dining on Paella and Spanish Wines. M.J. and Amanda Garrett along with Justin and Andrea Allender were just the perfect guests for enjoying the Spanish-themed evening.

The Tapas (appetizer) Table included two Spanish Cheeses Mahon and Manchego,Blood Orange and Lemon Marinated Olives with toasted cumin and Sherry Vinegar. Spanish Marcona Almonds and Quicos, which are Spanish Corn nuts, were also served.

Red Wine-Braised Chorizo Sausage served warm was another delicious tapas and the crusty pan grilled bread was used to soak up all of the delicious juices!

The evening began with a toast along with a bubbly glass filled with Domaine de Tharsys CAVA, the sparkling wine from the Cataluna Region of Spain.

Along with the Tapas, everyone sampled 2 other White Spanish Wines: Vina 24 2009 Albarino from Costers del Segre Region and an especially fabulous White Rioja( Rioja Blanca) 2009 Ostatu from the Rioja Region.

The Table is exquisitely set for dinner!

While the guests where enjoying the Tapas, wine and conversation,I was prepping the Paella. BOMBA Rice is the ONLY rice for Paella which is grown in Valencia,Spain.

There are many recipes and styles of Paella, depending on what area of Spain it comes from. PAELLA MIXTA is the Paella of the evening. This is a mixture of seafood including mussels, clams, shrimp, calamari as well as marinated chicken pieces and smoked pork richly seasoned with a saffron and a homemade sofrito.

This cool, refreshing Green Salad with Asparagus,Sweet Red Oranges and Red Onion with Fresh Tarragon & Basil Buttermilk Dressing was a nice contrast to the spicy meal. Everyone loved it!

Spain produces many high quality affordable wines. Here are the red wines that I selected to pair with the rest of the meal. Protocolo 2009 is delicious and intense 100% Tempranillo from Central Spain and the spicy, fruit-driven 2009 Garnatxa (Garnacha) Joan d’Anguera from the Catalonia Region were the perfect choices for this evening. Iroquois Wine and Spirits in Nashville,TN is a great source of Spain Wines. Ernie Paquette, owner and wine expert has a fabulous selection of Spanish Wines as well many other unique wines for you!

A Discussion and Sampling of the Spanish Wines

Presenting and serving the Paella Mixta

Flan is a popular dessert very similar to creme brûlée. It is a baked custard with a caramel at the bottom of the pan. I used authentic Flan pans. When you invert the cooled custard onto a plate, the rich caramel flows over custard and makes a beautiful presentation as well as a delicious ending to a rich meal. The pans are available at

The dessert pairing wine is the classic Spanish Sherry Pedro Ximenez Alvear 1927 from the region of Montilla-Moriles.
This sherry is made with the SOLERA method. To put this simply, a little of each barrel of the young sherry is blended with the older sherry for quality and consistency. In each bottle, there is a little of the 1927 vintage. The complex flavors include caramel, prunes, raisins, molasses, hints of chocolate and coffee as well as spices such as cinnamon and nutmeg, orange and lemon. PX is an intensely sweet dessert wine with complex flavors pairing well with many desserts. Serve chilled.

Wanting to experience A Spanish Evening in your home? Find someone who loves to make Paella and is passionate about wine PLUS a gathering of your close friends to share the event!

Wishing they had been invited!

CHEERS and Buenas noches!
