Located just off of the Texas Wine Trail on 290W, there’s a little winery making a big splash with beautiful sparkling wines right here in the picturesque Texas Hill Country. Elisa Christopher Wines are known for their sparkling wines made in the method of champagne as well as their beautifully bold reds and lovely rose’s that pair perfectly with summer.
Elisa Jones, owner and winemaker is a wine-whisperer. She knows what she’s doing and her hard work and dedication to Texas winemaking is spectacular. She makes sparkling wines with 100% (one hundred percent) Texas grown grapes and then works her magic creating some of the most beautiful traditional method sparkling wines around.
Method Champenoise – Champagne Method -Traditional Method is the method of winemaking where wine undergoes secondary fermentation in the bottle to create a bubbly wine with multiple layers of flavors and aromas.

Elisa is making sparkling wine just the way it’s done in Champagne, France and with all of the finesse but because her winery is not in Champagne, France, it can’t be referred to as champagne. And, she is making these gorgeous sparkling wines with traditional grapes used in champagne and is also making award winning sparklers with Blanc du Bois, a grape that grows well here in Texas due to it’s Pierce’s Disease-resistant hybrid variety which is common in Texas.

Ultra Brut aka Brut Naturel or Extra Brut, has no added sugar or very minimal sugar added, usually less than 3 grams per liter.

At first sip, you experience crisp Ultra Brut wine with zesty bubbles layered with delightful aromas and flavors of fresh lemon, pear, apples, and a hint white floral aromas. This sparkling wine is multidimensional in flavors you crave in a refreshing wine with bubbles with a touch of richness.

This is all possible because of the big, bold red grape varietal Mourvèdre, a Rhone grape that grows well here in Texas.
Mourvèdre wines are typically known for their dark, rich, and full-bodied character, offering a complex flavor profile. Hints of black and red fruits like blackberry, plum, and cherry, along with spicy and earthy elements like black pepper. When it’s made into a rose’ and allowed to sit on the skins for a longer period of time, a gorgeous deep pink almost ruby-hued rose’ with lots of structure and flavors reminiscent of it’s red wine sister is born.
