 Nashville’s Hot Chicken has been taken to a whole new level with Tex-Mex Inspired Hattie B’s Hot Chicken Tacos!

 Hot Chicken is Nashville’s Signature Dish!

People from all over the world travel to Nashville to get their hot chicken fix and Hattie B’s Restaurant has quickly become the first stop!  Perfectly seasoned, crispy fried chicken is taken directly from the fryer and coated in a signature mixture with generous amounts of cayenne pepper, brown sugar and other spices that is a flavor explosion in your mouth!

Once you start eating it, you can’t stop!

I invited John into my kitchen for a taping of Nashville Unleashed to show us how the amazingly addictive and tasty Hattie B’s Hot Chicken is made. He thought this would be the perfect time to make Hot Chicken Tacos, a recipe he has been wanting to try out. (which is not in the restaurants)

So, that’s what we did!

Some of my culinary influences are from experiencing life in Austin, Texas so John asked me to whip up a some of my favorite recipes to go with the Tex-Mex inspired Hot Chicken Tacos. Quick-Pickled Red Onions and Cucumbers are easy to make and add a cool, crisp and tangy fresh flavor and texture contrast. Homemade Pico de Gallo with roasted corn,  jalapeños and lime juice put the perfect finishing touch to the tacos.

John brought Hattie B’s medium spice blend and a big batch of chicken tenderloins. Then, the crispy tenderloin pieces were bathed in the magical Hot Chicken bath! We couldn’t keep our hands off of them! Yes, it medium hot with the full glory of cayenne pepper but balanced but the sweetness from the brown sugar and other spices. HOLY WOW! Addictive to say the least! I think there is some kind of endorphin release when you eat a mouthful of cayenne and you just want more!

We were assembling them as fast as we could and adding all of the fresh accompaniments. The fresh flavors of cool Lime Cilantro Crema and Pico de Gallo added wonderful flavors.  The addition of  sweet, vinegary and crispy homemade Quick Pickled Cucumbers and Red Onions were amazing!

Hattie B's Nashville Hot Chicken Tacos

Ingredients
  • 1 cup Mexican Crema or Sour Cream
  • 1 bunch cilantro
  • 1 lime, zested and juiced
  • Quick Pickled Kirby Cucumbers
  • ½ cup white vinegar, eyeball it
  • 2 rounded teaspoons sugar
  • 1 teaspoon mustard seed
  • 1 teaspoon salt
  • 1 clove cracked garlic
  • 1 teaspoon dried dill or 2 tablespoons fresh dill leaves, chopped or snipped
  • 4 kirby cucumbers, sliced
  • Pickled Red Onions
  • ½ cup apple cider vinegar
  • 1 tablespoon sugar
  • 1½ teaspoons kosher salt
  • 1 red onion, thinly sliced
Instructions
  1. For the cucumbers:
  2. Heat small saucepan over medium high heat.
  3. Add vinegar, sugar, mustard seed, salt, and garlic to the pan and cook until it begins to simmer and sugar dissolves.
  4. Toss the dill, and sliced cucumbers together in a heat-proof bowl.
  5. Pour the simmering liquid over the cucumbers and stir to evenly coat.
  6. Allow to cool to room temperature or chill before serving.
  7. For the Pickled Red Onions;
  8. Whisk first 3 ingredients and 1 cup water in a small bowl until sugar and salt dissolve. Place onion in a jar; pour vinegar mixture over.
  9. Let sit at room temperature for 1 hour.
  10. For the Lime Cilantro Crema:
  11. Put all ingredients for the creme in a food processor and blend until smooth.
  12. Serve.
